Tasty Tuesday

Today's the day to share a favorite recipe--here's our family's current favorite:

Oatmeal Cookie Granola with Raisins

10 c. oats
1-1/2 c. wheat germ
1-1/2 c. coconut
2-1/2 c. chopped walnuts
3/4 tsp. salt
1/2 c. brown sugar
1/4 c. maple syrup
3/4 c. honey
1/2 c. oil
1/2 c. margarine
2 tsp. cinnamon
2 c. raisins (opt.)

Combine oats, wheat germ, coconut, and walnuts in large pan or bowl. Set aside.
Combine all remaining ingredients except raisins in saucepan. Bring to a boil, stirring constantly. Pour over dry ingredients; stir till evenly coated. Spread on 2 foil-lined baking sheets. Bake at 325 for 20-30 minutes, stirring every 10 minutes. (Add raisins during last 10 minutes, if desired.) Let cool completely; remove from baking sheets and store tightly covered.

This is absolutely delicious--Wes takes it in his bucket EVERY night, and the kids eat it almost every morning for breakfast. Please note that this is a "loose" granola, more like cereal, rather than "chunky."

    I am going to make granola this weekend. I am allergic to nuts and coconut. I am used to leaving the nuts out but would this be good with just leaving out the coconut or would I need to replace it with something to make the texture outcome the same?

  3. Hi Elizabeth,
    I have never tried making this recipe without coconut, but I really think it would be fine. The amount of coconut is very small compared to the amount of oats, anyway. I have sometimes replaced part of the wheat germ with extra oats, and that change hasn't seemed to affect the outcome. If you try it without the coconut, I'd love to know how it turns out!
